Regions Limestone Coast (Wrattonbully & Coonawarra), Barossa (Eden Valley)
Harvest February & March 2013
Alcohol 15% Alc/Vol
Vintage Conditions Warm and dry conditions prevailed across much of South Australia throughout the growing season in 2012-2013. Although yields were down, vine and fruit condition was excellent. Ideal temperatures throughout January and February promoted berry flavour development and ripening. Combined with careful vineyard management, these conditions produced grapes of outstanding quality. The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3-5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure.
Offering classic Australian Cabernet expressions with distinctive cassis flavours and aromas that are vibrant and enticing, this wine is generous with a long finish on the palate and soft tannins. Ready to be enjoyed now or cellared for 3-5 years. Try with slow cooked duck dishes.
Varietal Cabernet Sauvignon
Regions Coonawarra, Adelaide Plains, Riverland, Barossa
Harvest March 2013
Alcohol 14.5% Alc/Vol
Vintage Conditions Lower than average rainfall in both Coonawarra and Adelaide Plains reduced yields slightly, however the smaller berries and bunches produced exceptional quality fruit. Cabernet Sauvignon was outstanding in both of these premium wine regions. The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3-5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure.
